Ingredients
3 Eggs
1 cup Vegetable oil
2 cups White sugar
2 cups Grated zucchini
2 tsp Vanilla extract
1/2-3/4 cup Toasted walnuts, chopped
1 tsp Salt
1/4 tsp Baking powder
3 cups All-purpose flour
3 tsp Ground cinnamon
1 tsp Baking soda
Directions
- Preheat oven to 325o
- Grease two 4 x 8 inch loaf pans with oil spray or vegetable oil; lightly flour pans dumping out any excess flour.
- In a large bowl, beat eggs until light and frothy.
- Mix in oil and sugar.
- Stir in zucchini and vanilla.
- In another large bowl, combine flour, cinnamon, soda, baking powder, and salt; stir into egg mixture just till moistened.
- Add chopped walnuts to mixture.
- Divide batter into prepared pans.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
Note:
Makes two large loaves.
