Sauteed Spinach

Ingredientsfresh_spinach

1 T                 Extra-virgin olive oil

1 T                 Unsalted butter

1 clove            Garlic, peeled and minced

2 bunches        Fresh spinach, stems removed

                       Coarse salt to taste

2 tsp                Balsamic vinegar

 

Directions

- In large skillet, heat olive oil and butter over medium-high heat.

- Add garlic; saute until it just begins to take color, about 30 seconds, being careful not to let it burn.

- Add spinach, using tongs toss well to coat spinach with the oil and butter.

- Cook the spinach, tossing frequently, until the leaves turn bright green and have slightly wilted, about 2 minutes.

- Season spinach with salt.

- Drizzle the balsamic vinegar over the spinach.

- Serve immediately.
