Blueberry Cobbler

“This is a favorite family recipe which we enjoyblueberries_200x300_bigstockphoto every summer during blueberry season…yummy!”

 

Ingredients

2 cups           Fresh blueberries

1 ¾ cups       Sugar

3 T                Butter

1 tsp             Baking Powder

1/4 tsp          Salt

1/2 cup         Milk 

1 cup            Sifted flour 

 1 T               Cornstarch
  
Directions

 - Cover bottom of 8" pan with berries.

- Mix 3/4 cup of sugar, butter, baking powder, salt, milk, and flour together until crumbly.

- Pour over blueberries.

- Mix remaining 1 cup sugar and cornstarch; sprinkle over flour mixture.

- Pour 2/3 cup of boiling water over top of cobbler mixture.

- Bake at 375° degrees for approximately 45 minutes to 1 hour.

- Serve warm with vanilla ice cream.

 

Note Put a piece of foil or a pan under baking dish to catch drips while cobbler is baking.
